虽然有许多人对大蒜有特别的喜好，认为大蒜既能杀菌消炎，又能健脑益智，多吃无妨，但科学家认为，每天吃一瓣生蒜是比较合适，若是熟蒜吃个两三瓣也就够了，多吃并无益处。

大蒜因为能预防和治疗多种疾病，也被人们认为是健康食品，受到很多人的“追捧”，不少人甘愿冒着“出口熏人”的危险猛吃大蒜。其实，任何健康食品吃起来都有适当的量，科学家认为，每天吃一瓣生蒜（约5克重）比较合适，如果是熟蒜吃个两三瓣也就够了，多吃无益。

■大蒜的“十八般武艺”

杀菌消炎：1954年，苏联医学家就证实了大蒜汁能在3分钟内杀灭培养基内的细菌，随着医学的发展，大蒜中含有的大蒜素具有广谱抗菌效果一一得到了证明，它对流行性脑脊髓膜炎病毒、流行性感冒病毒、乙型脑炎病毒、肝炎病毒、可致严重脑膜炎的新型隐球菌、肺炎双球菌、念球菌、结核杆菌、伤寒、副伤寒杆菌、阿米巴原虫、阴道滴虫、立克次体、葡萄球菌、痢疾杆菌、霍乱弧菌等多种致病微生物都有杀灭作用。

预防癌症：大蒜能够阻断致癌物质———亚硝胺的合成，抑制癌细胞生长，对癌细胞有杀伤作用。大蒜内含丰富的硒，能加速体内过氧化物的分解，减少恶性肿瘤所需的氧气供给，从而抑制癌细胞。科学家认为，大蒜对白血病、口腔癌、食管癌、胃癌、乳腺癌、卵巢癌等均有预防作用。

预防心、脑血管疾病：科学家给大蒜的另一个外号是“血管清道夫”，研究人员发现长期吃大蒜的人血管内壁里的沉积比不吃的人要轻很多。而血管壁沉积是心血管病的一大诱因，时间长了会让动脉阻塞、弹性变差，引起中风或心肌梗死。大蒜还能降低血脂和血液的黏稠度、抗血小板聚集，使心脏病、脑血栓和脑出血的发作危险大为减少。

促进毛发增长：大蒜中含有的挥发油能加速血液流向皮脂腺和毛囊的速度，从而促进毛发生长，对秃头也有治疗作用。把蒜泥敷在头皮上，可以改善毛发生长，消除头屑。如果加入同样多的植物油敷头，还能缓解头发的干燥程度。

增强免疫功能：动物实验表明，大蒜中的脂溶性挥发油能显著提高巨噬细胞的吞噬机能，有增强免疫系统的作用。

抗衰老：大蒜中含有蛋白质、脂肪、糖类、维生素及矿物质，具有预防血管老化、免疫力衰退等作用。

健脑益智：大蒜中的成分和人体内的维生素B1结合能产生“蒜胺”，这种蒜胺能促进和发挥维生素B1的作用，增强碳水化合物氧化供能，为大脑细胞提供足够的能量，使思维敏捷。

■不宜人群要特别注意

不过任何事物都有两面性，大蒜也有它的“禁忌人群”。

肝病患者不宜吃：很多人认为，大蒜能抗菌抗病毒，于是就用吃大蒜来预防肝炎，甚至有人在患肝炎后仍然每天吃大蒜。这种做法对肝炎病人极为不利，因为大蒜对肝炎病毒没什么作用，相反，大蒜的某些成分对胃、肠还有刺激作用，可抑制肠道消化液的分泌，影响食物消化，从而加重肝炎病人的恶心等诸多症状。另外，大蒜的挥发性成分可使血液中的红细胞和血红蛋白等降低，并有可能引起贫血，不利于肝炎的治疗。

非细菌性腹泻不宜吃：发生非细菌性的肠炎、腹泻时，不宜生吃大蒜。因为肠道局部黏膜组织有炎症，肠壁本身血管扩张、充血、肿胀、通透性增加，机体组织大量蛋白质和钾、钠、钙、氯等电解质以及液体渗入肠腔，大量液体刺激肠道，使肠蠕动加快，因而出现腹痛、腹泻等症状。如果再吃生大蒜，辛辣味的大蒜素会刺激肠道，使肠黏膜充血、水肿加重，促进渗出，使病情恶化。如果已经发生了腹泻，食用大蒜更应该慎重。

眼病患者不宜吃：中医认为，长期大量地食用大蒜会“伤肝损眼”，因此，眼病患者应尽量不吃大蒜，特别是身体差、气血虚弱的病人更应注意，否则时间长了会出现视力下降、耳鸣、头重脚轻、记忆力减退等现象。有些人患了近视眼或其他眼病，需要服用中药治疗，这时千万要忌口，否则直接影响疗效。在夏秋季时吃大量大蒜，对眼的影响最大。

■小贴士：吃蒜怎样除口臭

大蒜最理想的吃法就是生吃，不过很多人对于吃了之后满口的蒜臭很头痛。要减少吃大蒜产生的口臭，有以下办法。

1.要和蛋白质较丰富的食物一起吃。

2.吃过之后马上刷牙漱口。

3.喝些牛奶、咖啡、茶或吃些水果。

4.咀嚼茶叶。

5.多吃大枣清除口臭。

6.用醋或酒去除口腔异味。

7.咀嚼当归片
